Herby No Knead Bread

I have a love hate relationship with bread.  I love it fresh out of the oven, with a pat of melted butter on it.  Is anything better?  Now that I am no longer 16, bread goes straight to my belly and thighs.  I had been wanting to make this No Knead Bread for months!  You know the recipe that went around the web 3 times and came back again.  I didn’t want to get too crazy, since I have been known to bomb on yeast recipes.  So I simply cut up some fresh herbs and tossed into this famous No Knead Bread recipe.  Can I tell you that the scent of it baking in the oven was almost more than I could bear.  The bread was perfect.  The crust was nice and crunch and the middle was soft, dense and chewy all at the same time.  I won’t bother reposting since you can find it in the NY Times and on hundreds of blogs.  I found the extra directions and cute pics at Steamy Kitchen to be super helpful!

Success!  Can I tell you that the most exciting sound is to take this bread out of the oven and hear it crackling.  Sorry if you’ve seen this dozens of times, but I was super excited and had to document it!  =)

With my many mishaps with yeast, I’ve learned that bubbles are a good thing.  I also learned the hard way you can kill yeast with too hot water!

After 12 hours this was the transformation, I was so happy to see it looking that way in the morning.  Nothing is worse than seeing an un-risen blob….

Yipee!  It looks perfect.  I can’t wait to try this with other add ins, wheat flour, maybe some oats or honey as well.  I knew I was going to bake this up so I had bought an amazing container of roasted red bell pepper shallot goat cheese to spread on it.  So if you are afraid of yeast or making bread, take comfort in knowing that even I could do it- so you can too!  (Trust me it’s worth it!)

That looks great, love the addition of the herbs! I didn't have any sucess when I made the no knead bread, also have a love/hate relationship with making bread.

Another Lyndsey! =) I know how you feel, until I get through the first proofing I am holding my breath. Even after that I still get nervous. I think measuring the temp of the water is key for me. Try it again- you can do it!!
You made bread! It looks great Lindsey! I want to master in bread making one day...but I'm hoping maybe after kids go to school... Too much time and energy consuming! ;-) Yours look great and I want to put a good butter on it and have a big bite! By the way welcome home and we missed you!

Thanks Nami! Nami you can make this one. Seriously, if you look at that link from Steamy Kitchen she had her 4 year old make most of it. When I saw that I was like, Ok I have to give this a try!
This looks great! I have never made the famous no knead bread myself but it does sound interesting and your description of the final result is mouthwatering.

Thanks Manu! I know why this bread is famous the texture is great and the no knead is definately a plus!
You are so right about bread Lindsey, once we pass certain age it goes straight to butt hahhaa You did fantastic job! I love bread, and making it every day fresh so I can tell you that you did incredibly!!! Great pictures!!!

Sandra, I used to remember when I could go on a bread diet and LOOSE weight. Sigh. I tried to justify eating it by having a huge salad with it. Moderation and balance right?! =)
I am TOTALLY afraid of yeast! But I'm inspired! :D And like you... bread goes to my thighs :(... but I still devour it!

Hi Tiff! Yeah it seems like 1-2 bad expirences with yeast leaves anyone afraid for life. We can do it! I think measuring the heat of water has helped me a lot- I think most of the times I flubbed it I killed the yeast with too hot water.
Oh yum does this bread look amazing. I love the herbs in the bread!

I have my next bread recipe book marked too! My problem is being home for all the proofs! LOL
I want to bake bread too! I love your bread. I need a "fool-proof" recipe because baking, kneading and yeast all scare me. Great Job!
